Wild Rice Soup
Yield: 6-8 servings
List of Ingredients
- 4 1/2 oz. cooked wild rice
- 3 Tbsp. butter
- 1/2 cup leeks, diced
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 3 Tbsp. flour
- 1 quart chicken broth
- 3/4 pint heavy whipping cream
- salt and black pepper
Instructions
- Prepare wild rice ahead of time and reserve for the soup.
- In a large soup pot saute the leeks, carrots and celery until the vegetables are softened, about 2-3 minutes on medium heat.
- Add the flour and cook for one minute. Add chicken stock and cooked rice. Bring to a boil and simmer for 20-30 minutes.
- Add the whipping cream and season with salt and black pepper.
