    Chocolate Cherry Tarts

    Recipe Introduction


    This came from a diabetic cookbook. To me it seems to still have a high amount of carbs, I was thinking maybe trying Splenda in place of the sugar. The grandulated Splenda. I'm not sure though. I know the cherries, will still add to the carbs though.



    List of Ingredients


    • 2 (8oz) packages Neufchatel (light) cream cheese, room temp
    • 2/3 cup granulated sugar or granulated Splenda
    • 2 eggs, room temp
    • 1 tsp vanilla extract
    • 24 Keebler ® chocolate wafers, 30% reduced fat
    • 1 (21oz) can light cherry pie filling


    Instructions


    1. Preheat oven to 350 ° F.

    2. Line muffin tins with foil and paper cupcake liners.

    3. Beat cream cheese and sugar or Splenda until creamy. Add eggs and vanilla extract and beat until smooth.

    4. Place a chocolate wafer in each cup, spoon on cheese mixture. Bake 18 to 20 minutes.

    5. Remove from tins and let cool. Top with cherry pie filling.

    6. Chill overnight before serving.
