    Coconut Blackberry Slice

    List of Ingredients

    *For the base*
    4½oz CF margarine (or coconut oil)
    2¼oz caster sugar (fine sugar)
    1 egg
    1 tsp vanilla extract
    6½oz coconut flour
    1 tsp baking powder
    2¼fl oz milk sub

    *For the filling*
    6¼oz blackberry jam
    8¾oz blackberries

    *For the topping*
    3½oz CF margarine
    5 tbsp caster sugar
    2 eggs
    8oz desiccated coconut
    2¼oz coconut flour

    Recipe

    1. Preheat the oven to 180C/350F/Gas 4.

    2. To make the base, cream the margarine and sugar in a bowl until light and fluffy. Add the eggs and vanilla extract and stir to combine. Sift the flour and baking powder into the bowl and stir in with the milk.

    3. Flour your hands and press the base evenly into a greased and lined 30x20cm/12x8in baking tin. Spread the base evenly with jam and sprinkle with blackberries.

    4. To make the topping, cream the margarine and sugar in a bowl until light and fluffy. Add the egg and beat until combined.

    5. Stir in the coconut and one tablespoon sifted flour, then stir in the remaining flour. Spread the topping evenly over the blackberries.

    6. Bake the slice for 30 minutes, or until golden. Cover with foil and cook for another five minutes. Remove from the oven and allow to cool in the tin for ten minutes. Cut into rectangles.
