    My son loves meatballs for school lunch. I make a ton and freeze. Meatloaf sandwiches are also good with cold leftover meatloaf.

    List of Ingredients




    2 slices crumbled GFCF bread
    1 1/2 c Poha or Quinoa flakes
    1 egg
    1/2 c minced onion
    2 lb. ground meat (turkey, beef, lamb, ham, venison, a mix of two is
    best, I use
    1lb. ground round plus 1 lb. Lite Country
    Sausage by
    J.C. Potter, no nitrites)
    1/2 GFCF flour
    2 T olive oil
    1 c grated carrot, zucchini, pumpkin, squash or potato
    Seasonings are to taste!
    2 T tamari or GFCF soy sauce
    1 T tarragon
    2 T oregano
    1 T thyme
    1 T seasalt
    1 t black pepper
    1 T chili powder
    1 T paprika

    Recipe



    Mix everything in BIG bowl with clean hands, make patties, balls, or pat into loaf pan.

    Roll meat balls into dish of sweet rice flour for tasty
    crust.

    Fry patties like hamburgers, cook meatballs in 1/2 inch oil in
    skillet, or bake in oven, turning often.

    Pour 1/2 c of ketsup, Italian sauce on meatloaf and bake.
