    2 tablespoons coconut oil
    1/4 cup brown sugar, packed
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/8 teaspoon sea salt
    1 large banana
    3 tablespoons raw cococnut flakes
    5 slices of Tapioca Bread
    3 eggs, beaten
    3/4 cup milk sub

    Can be made into different varieties also, like pineapple, apple, etc...


    I created this for breakfast because I bought a loaf of Energ Tapioca Bread (that my kids threw back at me) and needed something to do with it. It actually worked out well, and very tasty! :)

    In a glass 9 X 11 baking dish, pour in the coconut oil. Sprinkle over the brown sugar, cinnamon, nutmeg and salt. Stir to make a paste, and spread out evenly. Slice the banana in very thin slices and place on top of the
    sugar mixture. Sprinkle bananas with coconut. Top mixture with bread slices (I had to tear one piece in half to get them to lay down flat). Mix together the eggs, and milk, and pour over top of the bread. Bake at 400 degrees for
    around 25 minutes, or until the eggs are set. As soon as you pull this from the oven, flip it out onto a piece of parchment paper, or a plate. Cut in pieces and serve. (We ate ours with 100% maple syrup)
