    Recipe Introduction

    From David's Blog Glutenfree-Au_Naturale - http://glutenfree-au-naturale.blogspot.com/2009/11/banana-almond-teacakes-gluten-dairy.html

    List of Ingredients

    3 eggs, separated
    100g (3 1/2 oz) ground almonds
    3 very ripe bananas, sliced
    1 Tbls honey
    sliced almonds to decorate, optional

    Recipe

Heat oven to 160 degrees centigrade (320 degrees F.

Place the egg yolks, honey and sliced bananas into a bowl and blend with a stick blender or electric whisk for 2 minutes.

Mixture will become light and fluffy, doubling in volume.

    Transfer to a clean bowl.

Add ground almonds to egg yolk mixture and fold through.

Whisk eggs whites to ’soft peak’ consistency.

Fold egg yolk and egg white mixture together, do not beat as this is key to the cake rising and staying light.

Spoon into a cupcake mould lined with paper cases and sprinkle sliced almonds on top.

Bake for 20 – 25 minutes or until a skewer comes out clean.

    David's Note:
They do not go very brown probably because there is no fat or high sugar content in them.
