    2 eggs
    1/3 C sugar
    1 tsp vanilla
    2 C GFCF sweetened milk substitute
    3 C Bette Hagman's Featherlight Flour Mixture
    1 TBS baking powder
    1/4 tsp salt
    1 tsp xanthan gum
    1 tsp vinegar
    Oil for frying
    Powdered sugar

    Recipe



    In a mixing bowl, beat eggs. Add milk substitute, vinegar and vanilla; mix well. Combine the flour, sugar, baking powder, salt, and xanthan gum; beat into egg mixture until smooth. Heat oil in an electric skillet or deep-fat fryer to 375 degrees. Place batter in a squeeze bottle (sport's water bottle with the pull-out spout removed works
    great) or in a funnel covering the bottom of the funnel spout with your finger. Holding the bottle or funnel several inches above the skillet, squeeze the batter from the bottle or release your finger and move the spout in a spiral motion creating a circular shape design. Fry for about 2-4 minutes on each side or until golden brown. Serve on paper plates so that the excess oil is drained. Dust with powdered sugar.

    Yield: 6 – 8 servings
