    List of Ingredients




    1/3 cup chopped onion
    1 tsp non-dairy margarine or olive oil
    1 package frozen broccoli, chopped (or fresh, steamed)
    2 cups cooked rice
    Salt and pepper to taste
    2 cups cheese sauce (See "Magic Mix" filed under dairy subs)

    Recipe



    In a saucepan, brown onion in non-dairy margarine or olive oil.

    Break up broccoli.

    Mix onion, broccoli, and rice.

    Place in a greased casserole dish.

    Add salt and pepper to taste.

    Make cheese sauce; pour over rice mixture.

    (Cover dish with foil. Label with date and baking instructions and freeze.)

    Baking Instructions: To prepare for serving: In refrigerator, thaw casserole.

    Place in oven and bake at 350 F for 45 minutes.

    Serves 6

    Author's Note: This recipe can be made in multiples and frozen in advance for busy days. Also makes good small portions for lunches just freeze in smaller dishes or ramekins or make the larger casserole and freeze smaller portions. To make a complete meal add shredded chicken.
