    Eden Quinoa Casserole

    List of Ingredients

    1 cup Eden Organic Quinoa, washed and drained or Eden Organic Red Quinoa
    1 1/3 cups water
    1 teaspoon Eden Hot Pepper Sesame Oil
    1 medium onion, chopped
    1 clove garlic, pressed
    2 teaspoons curry powder, optional
    1 cup celery, chopped
    2 cups broccoli, chopped
    1 medium organic tomato, chopped
    1 Tablespoon Eden Shoyu Soy Sauce(check gf status), or to taste (use a gf soy or tamari sauce)
    2 Tablespoons Eden Organic Brown Rice Vinegar

    Recipe

    Preheat oven to 350°.

    Roast rinsed quinoa in a dry skillet until it pops, stirring constantly to evenly roast and prevent burning.

    Place quinoa in a casserole dish and add the water.

    Heat oil, sauté onions, garlic and curry in skillet until onions are translucent.

    Add celery, broccoli and tomato.

    Sauté briefly and add to quinoa.

    Add shoyu and vinegar.

    Mix, cover casserole dish and bake for 45 minutes.

    Note from BL: Quinoa is very good at taking on the taste of things it is cooked with. If you don't have hot pepper sesame oil, use a nicely flavoured oil and add a favoured pepper (like jalepeno, chipotle or anaheim) to the celery and garlic when you saute them. The cooking time will allow the pepper flavour to works it's way through the
    grain.
