2 lbs ground beef
1 med onion diced (opstional)
salt & pepper to taste
Med pot of mashed potatoes
2 lg cans cream corn

layer in a large casserole dish, seasoned ground beef with excess fat drained off. cream corn, then top with mashed potatoes. put in a 350 oven until heated through, about 1/2 hr if you have just cooked the potatoes and beef. Serve with a salade and hot corn meal muffins or buiscuts.
When I make this, I do up about a half dozen lunches for my son at the same time. Do the same layers into single serving containers. They just go into the freezer while the casserole is int he oven for supper.
note for the lunches:(always take the food out of the plastic container before putting in the microwave for heating. Plastic releases toxins when heated.
