    Southern Sweet Corn Casserole

    This dish may be prepared ahead the day before and then baked straight from the refrigerator.

    List of Ingredients




    3 cups sweet potatoes, cooked
    1/4 cup CF margarine
    2 eggs
    1/2 cup CF milk sub
    1/2 teaspoon sea salt
    1 teaspoon vanilla

    TOPPING:

    1 cup pecans, chopped
    1 cup Sucanat or maple sugar
    1/4 cup GFCF margarine, softened
    1/2 cup sweet rice flour

    Recipe



    Beat sweet potatoes, margarine eggs, milk, salt, and vanilla
    together until smooth. Pour into a casserole.

    Mix topping ingredients and distribute evenly across the casserole by hand.

    At this point, it may by refrigerated and baked the next day or baked at 350 degrees F for 30 minutes.
