Zucchini Relish

List of Ingredients
12 c coarsely ground zucchini
2 green peppers, coarsely ground
2 red peppers, chopped
4 c coarsely ground onions
1/3 c pickling salt
1 tsp tumeric
1 tsp celery seed
1 tbsp cornstarch
1/2 tsp pepper
3 c vinegar
4 1/2 c white sugarRecipe
Mix pickling salt into vegetables in large stainless steel or enamel pan.
Leave overnight.
Next day: drain and rinse very well with cold water
Mix rest of ingredients and add to vegetables in pan.
Boil for 20 minutes or more, I do it until the the zucchini turns clear-ish.
Bottle and Seal.
If you need more instructions let me know. I use 3 good size zucchinis. I use two good size onions. I use 1 green and 1 red pepper each.
