    List of Ingredients




    1 C GFCF margarine (ex. Fleischmann Unsalted Sticks)
    3/4 C brown sugar
    1/4 C granulated sugar
    1 small package (4 serving size) GFCF instant vanilla pudding (ex. Jell-O brand)
    2 eggs
    1 tsp vanilla extract
    2 C Bette Hagman's Featherlight Flour Mix (filed under Flour mixes)
    1/4 C potato starch
    1 tsp baking soda
    1/2 tsp salt
    1 tsp xanthan gum
    2 C GFCF chocolate chips (ex. Enjoy Life)
    1 C finely chopped walnuts (optional)

    Recipe



    In a mixing bowl, cream margarine, sugars and dry pudding mix.

    Add eggs one at a time and beat well after each addition.

    Beat in vanilla.

    Combine flours, baking soda, salt and xanthan gum; gradually add to the creamed mixture.

    Stir in chocolate chips and walnuts.

    Drop by tablespoonfuls 2 in. apart onto ungreased or parchment-lined cookies sheets.

    Bake at 350 degrees for 13-14 minutes or until lightly browned or set.

    Cool 1 minute on sheets and then transfer to wire racks to cool completely.
