    Bambi's Sun Butter Bars

    Recipe Introduction

    Original recipe from "Bambi Goes Green"

    List of Ingredients

    2 1/2 cups crisped rice cereal, crushed
    1 1/4 cups brown rice flakes,
    1/2 cup sorghum flour
    1/2 cup brown rice flour
    1/2 cup date paste (unsulphured), chopped
    1 1/2 cup sun butter
    1/2 cup brown sugar
    3/4 cup pure honey
    1/2 cup Fair Trade cocoa powder (optional)
    1 tsp xanthan gum
    1 tsp pectin
    2 tsp baking soda

    Recipe

    Prepare a 9”x 13” pan by lightly greasing bottom and sides.

    In a large bowl, combine rice cereal, brown rice flakes, date paste, baking soda, xanthan and pectin and set aside.

    In a medium-sized heavy-bottomed saucepan, mix sugar, sunbutter, honey and cocoa and cook over low heat for 3 minutes.

    Pour over dry ingredients and stir to evenly coat.

    Press firmly into prepared pan. Refrigerate until set (about 1 hour) before cutting into bars.

    Yield: 12 servings

    Theresa's Notes:
    I made the sunbutter bars with a couple of changes. I replaced the sunbutter with almond butter (that's what was on sale this week), deleted the date paste and pectin. The next time I make these I will use less honey. It was very, very sweet.

    Verdict.

    Gave to a celiac and non-celiac kid. Both agreed they were better than the sunbutter bars from Enjoy Life Foods. Gave a bar to two non-celiacs at work, and they loved them. And my son ate one!!!!! That's the only thing I care about.

    Very good for a kid's lunch.
