    GFCF Graham Crackers

    Source of Recipe

    Lori Bakes

    List of Ingredients

    3/4 cup margarine substitute
    1/4 cup honey
1 cup brown sugar (firmly packed)
    1 teaspoon vanilla
    1 1/2 cup rice flour
1 1/2 cup GF flour mix
    2 Tablespoons soy flour
    1 teaspoon xanthan gum
    1 tsp salt
    1 tsp cinnamon
    3 tsp baking powder
    1/2 - 3/4 cup water

    Recipe

Preheat oven to 325 degrees. Mix margarine, honey, sugar, and vanilla. In another bowl mix dry ingredients. Stir dry into wet mixture and add small amounts of water until it forms a soft ball. Chill one hour. Split dough in half on a rice floured piece of wax paper. Cover with another piece of wax paper and roll out to 1/2 inch , then transfer dough to greased cookie sheet (Do this by picking up the wax paper with the dough on it and 'rolling' it over onto the cookie sheet). Continue to roll it out on the sheet to about 1/8 - 1/4 inch thick. Remove wax paper. Trim the edges with a knife or pizza cutter. Cut into
squares with a pizza cutter and prick each square with a fork a few times. I sprinkled cinnamon and sugar on top before baking. Bake for about 30 minutes and remove the ones on the edges if they start to get brown. transfer from
cookie sheet to wire cooling racks when done. Warning...if the graham crackers are brown-they're over done.
