    Makes 16 cookies.

    List of Ingredients




    1/4 cup margarine
    2 T honey
    1/2 sugar
    1 1/2 t vanilla
    3/4 cup brown rice flour
    1/2 cup white rice flour
    5 T potato starch or tapioca flour
    1/2 t xanthan gum
    1/2 t salt
    1 1/2 t baking powder
    2-4 T water
    cooking oil or spray

    Recipe



    Blend softened margarine, honey, sugar, and vanilla. Add dry ingredients. Add water as needed 1 T at a time until mixture forms large clumps.

    Shape into a ball, cover and chill 1 hour. Divide dough, roll 1/4 inch between rice floured wax paper.

    Keep rest of dough chilled. Oil cookie sheet. Cut shapes
    and separate 1 inch apart on sheet.

    Bake 325F for 10-12 minutes until edges are set. Cool 2 minutes and remove to cooling rack.

    Flavorings to try (not all at once)
    finely crushed nuts
    spice cookies- 1/4 t nutmeg, 1/2 t cinnamon, 1/8 t cloves
    lemon- 2 T fresh lemon peel, grated

    GENERAL COOKIE HINTS:

    Use parchment paper, good insulated cookie sheets, metal cookie cutters, and chilled dough.

    Roll dough out on parchment paper, cut out shapes, remove scraps and put entire paper on cookie sheet with cookies remaining on the parchment.

    Cookie presses make uniform fast cooking cookies even with
    soft doughs, don't use parchment paper with this method because the dough NEEDS to stick to the cookie sheet.
