    List of Ingredients




    2 cups chopped celery
    1/4 cup chopped chives (or onion)
    1/2 teaspoon celery seed
    1/2 teaspoon salt (or Greek Seasoning)
    1 cup whole soaked grains (amaranth, millet, buckwheat, teff, etc.)
    1/4 cup oil
    1 1/2 cups each coconut milk and water
    1 cup cheese sub (grated)
    1 cup GF bread crumbs

    Recipe



    In large oven going skillet saute celery, chives, celery seed, salt and grains in oil until celery becomes soft. Stir coconut milk and water together and add to sauted mixture. Simmer partially covered until most of liquid has been absorbed, stir in 3/4 cup of the cheese sub and sprinkle the rest on top, followed by the bread crumbs. Dot with margarine. Bake 325 degrees for 10 to 15 minutes until cheese sub is sizzling and somewhat firm.

    BL's notes: You can use whatever milk sub you like. I just happened to have coconut milk on hand, but rice or potato milk would probably work really well too.

    Serves 6
    1 serving equals 8 grams protein
