    Corn Casserole

    List of Ingredients

    Kernels cut from 4 ears of corn
    1/4 cup canola oil
    1/2 cup gf flour
    1/2 cup corn meal
    1/3 cup sugar
    2 teaspoons gf baking powder
    1/4 teaspoon salt
    One 4 ounce can of chopped green chiles
    2 eggs, lightly beaten(egg whites to equal 2 eggs)
    1/2 teaspoon fresh ground pepper
    1/2 teaspoon salt
    1 cup gf/cf sour cream or some type of milk sub you can sour.
    1 1/2 cups shredded dairy free cheddar cheese (can omit)

    Recipe

    Preheat oven to 350 degrees F.

    In a large bowl, mix together all ingredients except for mock sour cream and cheese sub.

    Drop mock sour cream by spoonfuls evenly over casserole and fold in gentlly.

    Sprinkle top with cheese sub if desired.

    Bake for 40 minutes or until set.
