    Sugar-Free Macaroons for Passover

    List of Ingredients




    2 egg whites from large eggs
    1/8 tsp salt
    1/2 Tbsp Stevia Plus (or other dry equivalent of 1/4 cup of sugar)
    1 cup almond flour
    2 Tbsp finely shredded dry coconut
    1/2 tsp coconut or almond extract
    2 tsp potato starch

    Recipe



    Preheat your oven to 325 F. Line a cookie sheet with parchment paper.

    Combine dry ingredients in a small bowl. In another bowl whip egg whites, coconut or almond extract and salt until soft peaks form.

    Fold in sweetener and continue whipping at high speed until stiff peaks appear.

    Slowly and gently fold in almond flour, coconut and potato starch.

    Drop loose tablespoonfuls (do not compact) onto cookie sheets. Bake for 20 minutes or until slightly brown on top.

    Cool and enjoy!
