    Smoked Turkey Brine

    List of Ingredients

    2 gallons water
    2 cup salt (3 cups Kosher or coarse salt)
    1 cup sugar
    12 fresh tarragon leaves or 1/2 cup dried tarragon
    2 teaspoon black pepper

    Note:The water you use should not be chlorinated. If you don't have easy access to good spring water boil it first, then let the water cool.

    Recipe

    Place 1 quart of the water in a large pot and heat until boiling.

    Turn off heat.

    Add remaining ingredients to include the rest of the water.

    Mix thoroughly.

    Place Turkey in large non-metallic dish and cover completely with brine.

    Let sit in refrigerator for 1 hour per pound.

    Remove Turkey from Brine, rinse thoroughly and pat dry.

    Coat with olive oil.

    Place in Smoker.

    Follow directions for your smoker.
