    List of Ingredients




    Olive oil
    1 small onion, minced
    1 garlic clove minced
    1 13 to 15 oz can of garbanzo beans, drained & rinsed
    1 cup fresh gf bread crumbs ( 2 slices gf bread)
    2 tablespoons minced parsley
    2 tablespoons tahini
    1 tablespoon lemon juice
    1 teaspjoon ground cumin
    1/2 teaspoon salt
    1 egg
    gf flour (tapioca starch works well)

    Recipe



    In a 12 inch skillet over medium heat, heat one tablespoon of the oil and cook the onion & garllic until tender.

    In a medium bowl, (I use the food processor) mash the garbanzo beans.

    Stir in everything else except flour.

    Add the onions & garlic.

    On a lightly floured surface, with floured hands, shape into patties in your choice of size.

    Add 2 tablespoons of oil to same skillet.

    When hot, cook the patties until golden on both sides, about 8 minutes.

    Drain on paper towels.

    Serve in gf pitas with shredded lettuce, diced tomatoes, diced cucumber, fresh coriander & your dressing of choice.
