    List of Ingredients




    1 c Sorghum flour
    1/3 c Quinoa flour
    1/3 c Tapioca starch
    1/2 c Sugar or sweetener of choice (I used regular sugar)
    1 tsp Xgum
    1 tbl gf & aluminum-free (of course) Baking powder
    1/4 tsp Kosher salt
    2 Ener G egg replacer
    1 1/4 c Mashed bananas (about 3 bananas-mashed but with a few small chunks here and there)
    1/4 c Oil (I used Canola)
    1 tsp Apple cider vinegar

    Recipe



    Mix the dry ingredients together until thoroughly mixed.

    Then mix the wet together.

    Bring together both wet and dry ingredients and mix until just combined.

    The recipe calls for an electric mixer but I didn't use that...didn't need it.

    Spoon the batter evenly into paper-lined or greased muffin pan.

    Bake in a 350 degree preheated oven for about 20 mins or until firm to the touch.

    Makes about 12 muffins.
