    4 eggs (I used enerG egg sub)
    1 cup Honey (I used Maple Syrup 100% pure not aunt jamima)
    1 cup vegetable oil (I used ½ safflower ½ olive oil)
    2 cups mashed bananas (I used 4 large ripe bananas)
    1 cup peanut butter (I used almond butter no sugar added, organic, natural)
    2 tsps vanilla
    3 cups Tom Sawyer Flour
    2 tbsp baking powder
    1 tsp baking soda
    1 tsp salt (omitted because frankly I didn’t see it til now)

    Recipe



    Preheat oven to 375 degrees

    Grease muffin pans

    Combine eggs, honey, oil, banana, almond butter, vanilla and blend well (or blend your subs)

    In another bowl combine flour, powder and soda and stir into the wet mixture.

    Fill muffin pans and bake 18-20 minutes until toothpick comes out clean.

    Not real sweet, not too almondy or bannany. Nice treat. Trying to fatten Indy up so I feel more than bones. He is like a walking stick, my dream one day but for a kid he needs some fat!
