    Cinnamon Roll Pancakes

    List of Ingredients

    2 c Mock Better Batter or Featherweight Blend
    1-1/3 c soured almond or other milk sub (put in 2 tbsp of lemon juice
    or vinegar then pour in the milk to fill the measure)
    1 egg, beaten
    2 T sugar
    3/4 t cinnamon
    1/4 c ground pecans

    Recipe

    Mix first 6 ingredients well together and cook on a hot.

    Sprayed griddle or skillet or skillet with Pam (or oil as usual) . Use
    an ice cream scoop to portion the batter
    and they all are the same size. Cook until brown on both sides.

    Plate and serve with butter and sugar. Makes about 7-8 pancakes.
