Miniature Potato Knishes

List of Ingredients




4 medium potatoes, peeled
1 tablespoon vegetable oil
1/2 red onion, diced
1 shallot, minced
2 eggs OR 1/2 cup liquid egg substitute, beaten
6 tablespoons rice baby cereal
1 teaspoon salt
1/4 teaspoon black pepper


Recipe



Cook the potatoes in a large pot of lightly salted water until tender.

Meanwhile sauté the onions until wilted and lightly golden.

Mash the potatoes; beat in the onions, eggs, cereal and seasonings.

Spray a sheet pan with non-stick spray and dollop a heaping tablespoon of the mixture onto the pan.

Bake for 5 minutes then flip and bake another 5 minutes.

Makes 6 servings
