    kosher salt (or sea salt)
    black pepper
    onion
    garlic
    rosemary
    thyme
    an orange
    brown sugar

    Recipe



    Basically, you just throw into a large pan or bucket and add a tablespoon or two of the spices and sugar, at least a cup of salt, quarter the orange and the (peeled) onion, and toss in a few (peeled) cloves of garlic.

    Then add water (enough to cover the turkey), stir, and add
    in the defrosted turkey.

    Let this sit in the fridge for about 24 hours.

    Then you cook as usual.

    Stephanie's Note: I have actually still stuffed the bird once brined.
