    List of Ingredients




    1 1/2 lb boneless, skinless chicken thighs
    2 tbsp ghee (or vegetable ghee)
    2 cloves garlic, minced
    1 small onion chopped
    1 tbsp Heinz Tomato Paste
    2 tsp mild curry paste
    1 tsp each minced fresh ginger and ground cinnamon
    1 cup drained, canned stewed tomatoes
    3/4 cup Heinz Tomato Ketchup
    2/3 cup plain soy yogurt
    1/4 cup coconut cream (you can use other milk subs but it's not as rich)
    2 tsp fresh lime juice
    1 tsp finely grated lime zest
    Hot cooked basmati or long grain rice
    Chopped fresh coriander (optional)

    Recipe



    Trim the chicken of any fat and cut into chunks. Heat half of the ghee in a large skillet set over medium-high heat. Add the chicken in batches and brown all over. Transfer the browned meat to a plate. Reduce the heat to medium.

    Add the onion and garlic to the pan. Cook, stirring often, until golden, about 8 minutes. Stir in the tomato paste, curry paste, ginger and cinnamon. Cook for 1 minute. Stir in the ketchup, soy yogurt, coconut cream, chicken pieces and any juices that have accumulated on the plate.

    Simmer, partially covered and stirring occasionally, for 15 minutes or until chicken is tender and sauce is thickened. Stir in the remaining ghee, lime juice and lime zest just before serving. Serve over basmati rice and garnish with chopped coriander (if using).

    Twists:

    Twist 1 For an authentic Indian supper, serve with rice, cooked lentils and warm flat breads.

    Twist 2 For a quick, sweet chutney accompaniment, blend equal parts Heinz Chili Sauce with orange marmalade or mango spread.

    Twist 3 For a pantry substitution, use curry powder instead of curry paste.

    Twist 4 For an Indian-inspired wrap, roll up the mixture in soft chipatti or roti.

    Twist 5 For a Bombay-style shepherd's pie, top the chicken mixture with mashed potatoes mixed with peas.

    Twist 6 For an amazing Middle Eastern chicken cobbler, top the mixture with biscuit mix sprinkled with cumin seed.
