    5 tablespoons gfcf mayonaise
    2 tablespoons dijon mustard
    1 tablespoon fresh parsley -- chopped
    1 tablespoon lemon juice
    1/8 teaspoon Tabasco sauce
    1/2 cup GFCF bread crumbs, crushed crackers or crushed potato chips
    1/2 teaspoon dried tarragon
    1 pound chicken tenders - cut into bite-sized pieces

    Recipe



    Preheat broiler. Line broiler pan with aluminum foil. Oil foil.

    In a small bowl, combine mayonnaise, mustard, parsley, lemon juice and Tabasco sauce. Mix well.

    One a sheet of waxed paper, combine bread crumbs and tarragon. Mix well.

    Dip chicken in mayonnaise mixture, turning to coat. Dredge in
    bread crumb mixture, turning to coat and patting so crumbs adhere.

    Place on prepared pan. Broil 4 inches from heat, turning once, until golden brown, about 5 minutes.

    Conversely you can deep fry for a more traditional taste.
