    Turkey Lettuce Wraps

    List of Ingredients

    1 lb ground turkey (I use thigh meat, which has more flavor than
    breast meat. But, breast meat's leaner.)
    3-4 stalks green onions chopped (or approx 1/2 onion might work too -
    I'm allergic to "regular" ones)
    1 can water chestnuts - minced
    soy sauce (or fish sauce)
    hoisin sauce or plum sauce (optional)
    chili sauce
    handful cilantro - chopped (optional)
    head of iceberg or butter lettuce (a variety that can form "cups"
    easily) - cut head in half and separate leaves to make your cups

    Recipe

    Saute turkey in pan with dash of oil until almost cooked. (If you use regular onion, saute onion with turkey) Add green onion and water chestnuts. Season with soy/fish sauce (I also used to add a little hoisin sauce before going GF) and a tad of chili sauce. Stir til everything's warm. Add cilantro last.

    Serve on lettuce cups. The rest of my family tops it with more hoisin sauce. Or, you could make a "PF Chang's" sauce. I think they make it with soy, white vinegar, chili oil, and chinese mustard. I'm sure you could also use ground chicken too.
