    1 cup soured rice milk (use 1tsp vinegar or lemon juice to sour the rice milk)
    2 well beaten eggs
    12 boneless skinless chicken breasts (about 3 3/4 pounds)
    1 1/2 cups Nature's Path Honey's Corn Flakes (or other malt-free variety)
    1 1/2 cups Sue Crosby's Bisquick-like GF mix (recipe is filed under flour mixes category)
    seasonings like dill, sage, majoram, thyme, parsley, salt and pepper (to taste)

    Heat oven to 400 degrees. Spray l5x10x1 inch pan with cooking spray,
    set aside. Into ungreased 13x9 inch (3 quart) glass baking dish, pour
    soured rice milk and beaten eggs. Whisk to combine. Add chicken;
    turn to coat. Let stand 5 minutes.

    Between two 1-gallon resealable plastic food-storage bags, divide cereal, placing 3/4 cup cereal in each bag; crush with rolling pin.

    Add 3/4 cup of the Bisquick mix and (dried) seasonings to
    cereal in each bag. Remove chicken from milk; discard
    milk mixture. Add a few pieces of chicken at a time to cereal mixture.

    Seal bag; shake to coat.

    Place chicken in sprayed pan. Spray coated chicken lightly with cooking spray.

    Bake uncovered 40-50 minutes or until juice of chicken is clear when center of thickest part is cut (170 degrees).
