    List of Ingredients




    1 large beet, peeled and cut into chunks
    1/2 butternut squash, peeled and cut into chunks
    1 onion, sliced
    3 cloves garlic
    1 cup beans (mixed variety)
    1/2 cup quinoa
    1/2 cup amaranth, gf oat groats, millet or buckwheat
    1 potato, cut into chunks crock pot
    1 tablespoon gf Soy Sauce
    3 tablespoons vegetarian boullion or gf Onion soup mix
    1 tablespoon smoky paprika (also called Hungarian Paprika)
    1 package matzah ball mix, prepared per package directions (use mock
    matza ball recipe in recipe circus archives)
    6 cups water

    Recipe



    Spray slow cooker with cooking spray. Put all ingredients except matzo balls in slow cooker.

    Cover with water. Drop the mock matzo balls on top. Turn on high for at least an hour before Shabbat and then bring to low. Allow to cook overnight and serve for lunch. Matzo balls may be omitted (BL says: I find the mock ones just break up into bits of goo in the stew.)
