    3 Seed Bread

    Recipe Introduction

    A simple basic variation which adds fibre, something which is often a real problem for some on a GF diet.

    List of Ingredients

    1 package Miss Roben's White Sandwich Bread
    2 jars Beginner Baby Food Sweet Potatoes*
    1/4 cup flaxseed
    1/4 cup chia seed
    1/4 cup sunflower or pumpkin seeds
    1 1/4 cup water (room temperature
    3 tbsp coconut oil

    *or 1 large egg and 1 egg white (at room temp)

    Recipe

    Preheat oven to 350 F. Prepare a loaf by greasing and/or lining with parchment.

    Combine oil and babyfood. Add the seeds and stir to combine. It will become paste-like.

    Pour in 1/2 of the water, and stir until the seed mixture is smoothish. Add 1/2 the package of bread mix and the yeast packet.

    Add the remainder of the bread packet and 1/2 the remaining water. Stir. The batter should be pourable but not runny. If too thick add some more water.

    Pour in to the prepared pan and set aside for 20 minutes.

    Bake at 325 for 40 - 50 minutes or until a toothpick inserted comes out clean.

    Without the hat, it easily browns too quickly on the outside. Hat should look something like this: _/\_ The two ends are open so the steam can escape, but the pyramid shape helps redirect heat into the centre of the loaf to encourage more even cooking between the crust and the inside of the loaf.

    If you need yeast free, omit the yeast packet and add 2 additional tsp of baking powder to "help" that veggie puree.
