    List of Ingredients

    3/4 cup (175 ml) dried pinto beans
    1 red pepper, cut into large chunks
    1 yellow pepper, cut into large chunks
    1 red onion, cut into large chunks
    2 large potatoes, cut into large chunks
    2 garlic cloves
    2 bay leaves
    1 small bunch parsley, chopped
    1 pinch dried oregano
    - olive oil -
    - salt & pepper -

    Recipe

    Soak beans overnight. Once softened, cook in saucepan with cold water, bay leaves and salt for approximately 40 minutes.

    In a skillet, heat small amount of oil. Add onion and garlic.

    Fry lightly.

    Add peppers and potatoes to pan with onion.

    Drain beans and add to vegetables. Season with salt and pepper.

    Cook for approximately 30 minutes, adding a bit of water from time to time.

    Sprinkle with parsley, oregano and chili pepper.

    Serves 4
