    Cream of Snow Pea Soup

    List of Ingredients

    1/2 tsp cf margarine
    1 lb fresh raw snow peas, trimmed and chopped
    1 onion, chopped
    2 stalks celery, chopped
    1 small leek, chopped
    4 cups water
    1/2 bay leaf
    2 tsp mock cf sour cream
    pinch of thyme
    salt and pepper to taste

    Recipe

    Melt margarine in pan and add 1/4 cup water.

    Add vegetables and cook gently for 20 minutes.

    Add water and celery stalks.

    Simmer gently for one hour.

    Place in food processor or blender; puree and strain through strainer.

    Adjust consistency and finish by whisking in vegan sour cream.
