    Quinoa Cherry Pudding

    Original Recipe From Eden Organic Foods

    List of Ingredients

    1 cup Eden Organic Quinoa, washed and drained
    2 cups water
    1/8 teaspoon Eden Sea Salt
    1/3 cup Eden Dried Montmorency Cherries (coarsely chopped) or Eden
    Organic Dried Wild Blueberries or Eden Organic Dried
    Cranberries (leave whole)
    1 teaspoon ground cinnamon
    1/3 cup organic maple syrup
    2 cups EdenBlend (see note below)
    1 teaspoon pure vanilla extract
    1/3 cup slivered organic almonds, dry pan roasted for garnish
    or Eden Organic Tamari Roasted Almonds, chopped (be sure to check gf status as some tamari has gluten)

    Recipe

    Place the quinoa, water, sea salt, dried cherries and cinnamon in a medium saucepan.

    Cover and bring to a boil.

    Reduce the flame and simmer for 15 minutes.

    Add the EdenBlend and syrup.

    Simmer, uncovered, for another 10 minutes.

    Turn off the flame and mix in the vanilla.

    Cover the pan and let sit for 15 minutes to thicken.

    Place in serving bowls and garnish with slivered almonds.

    Note from BL: EdenBlend is a wheat free / glutenfree blend of amazaki brown rice and soy beans. It is a replacement for dairy milk. If one is avoiding soy, you can substitute your preferred non-dairy milk, but I used a combination of coconut cream and almond milk. You can make this with other dried fruits as well like peaches or apricots.
