    Split Pea Burgers

    List of Ingredients

    * 2 cups of split peas soaked overnight to the point where they are just starting to ferment a little (This gives the patties a really nice, slightly sour flavor.)
    * 1 large onion or a bunch of spring onions sauteed lightly in olive oil
    * 1 cup of mixed fresh herbs
    * 1 cup of lightly roasted chopped almonds
    * gf bread crumbs
    * salt and pepper


    Recipe

    Drain liquid from peas.

    Put the peas (uncooked, which is the secret for making any type of patty from legumes) and herbs in a processor and blend until the peas all combined and in a paste.

    Put it all into a mixing bowl and add the almonds and salt and pepper to taste.

    Mix in as many bread crumbs as required to make a mixture that will form into patties.

    Shallow fry them in olive oil.

    Note from Sandra: They are so easy and you can make a lot of them at once and eat them for the next couple of days.

    Note from BL: They freeze well on parchment on a cookie sheet and store well in the freezer if separated by a sheet of parchment between patties. Warm on the griddle, in the oven, or the microwave. Excellent on taco shells, roti or as part of a tortilla as well.
