    Source of Recipe

    Brenda-Lee Olson

    Recipe Introduction

Original recipe from "Easy Vegetarian Recipes"

    List of Ingredients

    1 c. dry split peas
    1 ½ c. tomato sauce
    1 tomato, chopped
    1 onion, chopped
    1 garlic clove, minced
    1 tbs. olive oil
1 tsp. hot pepper sauce (or to taste)
    8 large cabbage leaves
    2 c. water

    Recipe

Combine peas, sauce, tomato, onion, garlic, hot sauce and oil in a large pot.

Bring to boil; reduce heat and cook for 10 minutes.

    Preheat oven to 350 degrees.

Steam cabbage leaves in steamer until tender; drain and let cool.

Place about 3 tbs. of split pea mixture in center of each leaf.

Roll up and place in 13” x 9” baking dish coated with cooking spray.

Pour water over rolls and bake until heated through, about 20 minutes.

Variation by BL Olson: Layered Cabbage Casserole:

Alternate layers of softened cabbage leaves with filling in a lasagne pan.

Bake at 350 for 40 minutes or until cabbage is fork tender.

This freeezes very nicely and warms well in microwave or oven.
