Banana Nut Muffins

- 2 1/4 cups all-purpose flour
- 2/3 cup honey-crunch wheat germ
- 1/4 teaspoon baking soda
- 1/2 cup uncooked rolled oats, finely ground
- 1/2 cup packed brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 stick margarine, softened
- 1/2 cup egg substitute
- 1/3 cup walnuts, chopped
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- 3/4 cup Vanilla Ensure
Instructions
- Preheat oven to 350 F.
- In a large bowl, mix flour, wheat germ, baking soda, rolled oats, brown sugar, baking powder and salt with pastry blender. Cut in margarine until mixture resembles coarse crumbs.
- Stir in egg substitute, walnuts, vanilla extract, bananas and Ensure until flour mixture is moistened.
- Line 15 muffin cups with paper liners. Fill almost to the top with batter.
- Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
