    Roasted Salmon/Moroccan Style

    List of Ingredients


    • 1 Salmon filet ( 1 1/3 Lbs)
    • 1 Tbl sugar
    • 1 Tbl grated lemon
    • 1 Tsp salt
    • 1/4 Tsp black pepper
    • 1 Tsp ground cumin
    • 1 Tsp ground coriander
    • 1/2 Tsp ground cinnmon


    Instructions


    1. combine sugar,lemon rind,salt pepper and all other dry spices in small bowl to make dry rub.Rub mixture over salmon and refrigerate at least 30 minutes.

    2. heat oven to 425. Coat shallow baking dish w/ non stick cooking spray.Cut salmon into 4 equal pieces.Place salmon skin down,in baking dish.

    3. roast in 450 degree oven for 10 to 12 minutes or until fish flakes with fork.



    Final Comments


    Ive always served this dish with couscous and carrots
    and sour dough bread w/ salted butter.
