    BEEF IN CREMINI MUSHROOM SAUCE

    This is a very easy recipe, You may substitute a different variety of mushroom if You dont like the meatier taste of the portobella or the cremini.Also this is a one pan meal you want to cook the mushrooms in the pan that you brown the meat in w/ out washing the pan.

    List of Ingredients




    1 Lb wide egg noodles
    1 Lb top round or london cut into small bite size pieces.
    4 Tbs butter
    handful of fresh parsley finely chopped
    1 Lrg, finely chopped shallot
    1 Tbs olive oil
    1/2 cup dry sherry
    2 garlic cloves peeled and smashed
    1/2 Lb cremini mushrooms
    1/2 Lb Porobella
    1 - 1/2 Tsp Cury powder or even hot curry.
    1-1/2 Tbs Flour
    1 Cup heavy cream.
    Remember mushrooms are sponges they hold better if not washed, simple take a wet paper towel and wash the tops off.

    Boil the egg noodles for about 6 min, rinse in COLD water to stop over cooking.
    Brown your meat with 3 Tbs olive oil,garlic, add salt and pepper and curry to taste.
    take the meat and put aside in a bowl. do not wash the pan because your going to be cooking your mushrooms in the same pan .
    For the Sauce:

    Finely chop the shallot, and mushrooms
    melt 2 Tb of the butter in the med hot pan be careful not to burn or brown the butter, this will cause the sauce to taste bitter. Add the shallots and cook till translucent, add the mushrooms and cook until they become soft,Add the sherry and cook the sauce down.
    You now have the base for the making of a great sauce: in a glass bowl add your flour and heavy cream wisk all lumps out, its better if you use a sifter while adding the flour to the heavy cream.Add the flour to the mushroom and shallots. Cook over med heat, remember the sauce will not thicken till it has reached a boil. When the sauce has thickened, add the beef, and parsley and stir.Serve over the noodles.
