    This makes enough for a big crowd or for all winter.

    List of Ingredients




    8 boneless skinless chicken breast
    1 bay leaf
    1/4 teaspoon garlic powder
    1 tablespoon salt
    pepper to taste

    1 large onion, chopped
    1 large green pepper, chopped
    olive oil
    1 can chopped green chilies
    1 can Rotel tomatoes
    1 large can stewed tomatoes
    1 family size can of Cream of Mushroom soup
    1 family size can of Cream of Chicken soup
    1 large can tomato juice
    1 large can V8
    2 tablespoon chill powder (I use only 1 tablespoon)
    2 tablespoons cumin seed (Comino)
    1 teaspoon minced garlic
    2 lemons

    Recipe



    Simmer first 5 ingredients in water until chicken is done. Strain. Reserve broth. Cool and shred chicken. Pour 1/4 cup broth over chicken, cover and refrigerate overnight.

    Sauté onions and green pepper in olive oil. Add remaining ingredients and blend. Bring to a boil. Remove from heat and add juice of 2 fresh lemons. Simmer 30 minutes. Cool and put away. When ready to serve, add chicken and heat.

    Serve over tortilla chips. Garnish with sour cheam, shredded Cheddar-Colby cheese and chopped avocado
