2 slices thick bacon diced
1/2 med or large yellow onion, diced
3 tablespoons butter
3 tablespoons flour
6 cups cubed potatoes (one to two inch)
1 1/2 carrots diced very small
3 cups milk
1 can evaportated milk
1 1/2 cups water (or water used to boil potatoes in)
1 1/2 teaspoons salt
1/2 teaspoon celery seed
3 tablespoons chopped parsley (optional)
** cover potatoes with water, bring to boil, simmer until tender about 20 minutes.
**brown bacon pieces in skillet, remove,set aside
in clean skillet, melt butter, add flour, cook over low heat about 5 minutes. add hot water, sitrring constantly,
add milk, and evaportated milk. Stir until smooth, add seasonings,simmer on low until thickened.
**pour into saucepan with potatoes, cook over low about 20 minutes. add parsley
