    STRAWBERRY NUT BREAD

    List of Ingredients

    STRAWBERRY NUT BREAD WITH STRAWBERRY CREAM

    3 cups flour, sifted
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    2 cups sugar
    4 eggs, beaten
    1 1/4 cups oil
    2(10 oz.) pkgs. frozen strawberries, thawed and mashed
    (Reserve 1/2 cup of the juice for Cream Spread)
    1 1/4 cups pecans, chopped


    STRAWBERRY CREAM:

    1/2 cup of strawberry juice
    1 (8 oz.) pkg. cream cheese, softened
    1/4 cup sugar

    Recipe

    Bread:

    Sift flour, baking soda, salt, cinnamon an sugar into a large bowl.

    In a separate bowl, combine eggs, oil, strawberries and pecans.

    Make a well in the center of the dry ingredients. Add liquids, stirring just enough to moisten.

    Pour into 2 greased 9x5x3-inch pans.

    Bake at 350 degrees for 1 hour.

    Remove from the oven and let stand 10 minutes before removing from pans.


    To Prepare Strawberry Cream:

    Combine the reserved 1/2 cup strawberry juice, cream cheese and sugar; blend well.

    Serve as a side dish to spread on the Bread.

    Makes 2 large loaves
