    PINEAPPLE CHEESE CAKE

    1 unbaked pie shell
    (regular or graham cracker shell may be used)

    Pineapple filling:
    1/3 c. sugar
    1 Tbsp. cornstarch
    1 (9 oz.) can crushed pineapple (undrained)

    Cheesecake Filling:

    8 oz. cream cheese
    1/2 c. sugar
    1/2 tsp. salt
    2 eggs
    3/4 c. milk
    1/2 tsp. vanilla

    Prepare the pie crust of your choice. This works good in a 10-inch Quiche pan.

    Pineapple filling:

    Blend 1/3 cup sugar and cornstarch in a medium saucepan; stir in pineapple. Cook over medium heat, stirring, until thick and clear. Pour into unbaked crust.

    Cheesecake filling:

    Blend cream cheese with 1/2 cup and salt. Beat in eggs, 1 at a time. Blend in milk and vanilla.

    Pour over the pineapple. Sprinkle with cinnamon lightly.

    BAKE: At 400 degrees for 10 minutes, then bake at 325 degrees for 50 minutes.

    Serve chilled.
