    YOGURT PEACH MUFFINS

    List of Ingredients




    2 c. flour
    1/2 c. sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    Dash ground mace
    1 egg, beaten
    1/3 c. vegetable oil
    1/3 c. milk
    1 - 8 oz. carton peach yogurt
    1/2 c. dried peaches, finely chopped (optional)

    Topping:
    2 Tbsp. flour
    2 Tbsp. brown sugar
    2 Tbst. pecans, chopped
    1/2 tsp. ground cinnamon
    2 Tbsp. soft margarine

    Recipe



    Combine first eight ingredients in a large bowl.

    Mix egg, oil, milk, yogurt and dried peaches.

    Add to dry ingredients, stirring only enough to moisten.

    Fill greased muffin tins 2/3 full. Sprinkle 1 tsp. of the topping mixture over top of each muffin.

    TOPPING:

    Combine the flour, brown sugar, pecans and cinnamon in a small bowl. Cut butter into flour mixture until it resembles coarse meal. Sprinkle 1 tsp. on top of each muffin.

    BAKE: at 400 degrees for 20 minutes or until golden brown.


    YIELDS: 1 1/2 dozen muffins
