Old Fashion Baked Rice Pudding

6 eggs, lightly beaten
2 cups milk
1/2 to 2/3 cups sugar
1 tsp. vanilla
1/4 tsp. salt
1 1/2 cups cooked white rice
1/2 to 3/4 cup raisins (or dried fruit bits)
1/8 tsp. nutmeg
1/8 tsp. cinnamonRecipe
1. In ungreased 2-quart casserole or ovenproof bowl combine the eggs, milk, sugar and vanilla.
2. With a whisk, beat until combined but not foamy.
3. Stir in the cooked rice and raisins.
4. Place casserole in a 3-quart rectangular dish. Pour boiling watr into baking dish to a dept of one inch.
5. Bake at 325 degrees for 30 minutes.
6. Stir well, sprinkle with the cinnamon and nutmeg.
7. Bake for 20 to 30 minutes more or until knife comes out clean.
Serve warm or cold.
Note: Minute rice works fine.
