Chicken Breasts With Mushrooms
This is excellent.
List of Ingredients
- 2 whole chicken breasts, boned
- 2 eggs, beaten
- Bread crumbs
- 1/2 cup butter
- 1/2 pound fresh mushroons, sliced
- 5 slices muenster cheese
- 1 cup chicken broth
- 1 lemon, halved
Instructions
- Cut breasts in large pieces; sprinkle with salt and pepper and immerse in beaten egg. Refrigerate for two to three hours.
- Drain and roll in bread crumbs, then brown in butter. Place chicken pieces in a single layer in a baking dish; cover with mushroom slices and top with cheese.
- Bake in a preheated 350 oven for 30 minutes, basting several times with chicken broth.
- Squeeze fresh lemon juice over chicken just before serving. Serves 4.
Final Comments
I usually skip the step about putting the chicken in the refrigerator for 2 to 3 hrs. Couldn't really tell the difference.
