Try this excellent recipe if you want to try spinach in a different way.
List of Ingredients
1/4 chopped onion
1 clove garlic, minced
4 tablespoons butter, divided
2 tablespoons flour
1 cup milk
Salt and pepper to taste
3 eggs, separated
1 cup chopped cooked spinach, see note
3/4 to 1 cup shredded cheddar cheese
Instructions
Saute onion and garlic in 2 tablespoons butter. Add remaining butter and melt; add flour and stir until smooth. Add milk, salt and pepper and whisk until thickened.
Beat yolks until lemon-colored. Stir a little of the sauce into the egg yolks to warm, then add to sauce. Add spinach and cheese.
Beat egg whites until stiff and fold into spinach mixture. Turn into a greased 1-quart casserole. Set in a larger pan of hot water (1 inch up side of casserole) and bake at 350 for 50 minutes until golden brown.
Makes 4 servings.
Final Comments
Note: I use a 10-ounce box of frozen spinach. Microwave until completely thawed and hot. Squeeze out all moisture. Add directly to recipe without further cooking.
