Recipe Introduction


With the abundance of zucchini I have in my garden, I find this recipe quite tasty!





List of Ingredients



• 5 medium zucchini or 1 very large one
  
• 1 1/2 c. water
  
• 1 1/2 c. sugar
  
• 2 T. flour
  
• 1 1/2 t. cream of tartar
  
• 1 T. cinnamon
  
• dash of salt
  
• 1 pie crust
  
• Crumb Topping:
  
• 1/2 c. butter
  
• 1 c. flour
  
• 1/2 c. brown sugar
  
• Mix together and sprinkle on top of zucchini mixture in pie shell.
  






Instructions



1. Peel and seed zucchini and slice like apples. Put in sauce pan with the water. Bring to a boil, then reduce heat and simmer for 5 minutes. Drain. Add the remaining ingredients, mix and put in pie crust. Top with crumb topping and bake 375 degrees for 40 minutes.
   






Final Comments


Serve warm with a scoop of vanilla ice cream.
