Coconut Rum Cookies
List of Ingredients
2 1/4 c. flour
1 t. baking soda
1 c. butter, softened
1/4 c. white sugar
3/4 c. brown sugar
2 eggs
1 t. vanilla
2 t. rum extract
1 (3 oz.) pkg. instant coconut pudding mix
1/2 c. shredded coconut
1/2 c. chopped macadamia nuts
Recipe
In a large mixing bowl, mix together butter, sugars, pudding mix and extracts. Beat until smooth. Beat in eggs. Sift flour and soda together and gradually add to wet mixture. Stir in coconut and nuts.
Drop by tablespoons onto a lightly greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes or until lightly golden. Makes about 2 dozen cookies.
